Sweet Breakfast Sausage Cakes

(Makes 10-12)
Ingredients:

  1. 1 Apple
  2. 1tsp of Lemon Juice
  3. 1tbsp of chopped fresh Parsley
  4. ½ tsp of Cinnamon
  5. 450g Sausage Meat
  6. 50g Bran Flakes

Method:

  1. Set the oven to 180º.
  2. De-core the apple and grate it into a large bowl (if preferred peel the skins off first).
  3. Add the lemon juice, parsley and cinnamon to the bowl.
  4. Put the meat into the bowl and knead in the apple mixture until well mixed.
  5. Place the Bran Flakes in a clean plastic bag and holding it shut use a rolling pin to crush the flakes into small pieces and then place them on a clean surface.
  6. Taking a small fistful of the sausage and apple meat roll it in the crushed flakes and place it on a baking tray. Repeat this process until all the sausage meat is used up. (There may be an excess of flakes depending on how thickly you roll the cakes.)
  7. Place the cakes in the oven and cook for 25-30 minutes until they are cooked on the inside. Cut one in half to test for cooking time- it shouldn’t be raw (red). When cooked serve immediately, or if preferred allow to cool and eat them cold.

Great for packed lunch boxes too.
