Sweet Breakfast Sausage Cakes
(Makes 10-12)
Ingredients:
- 1 Apple
- 1tsp of Lemon Juice
- 1tbsp of chopped fresh Parsley
- ½ tsp of Cinnamon
- 450g Sausage Meat
- 50g Bran Flakes
Method:
- Set the oven to 180º.
- De-core the apple and grate it into a large bowl (if preferred peel the skins off first).
- Add the lemon juice, parsley and cinnamon to the bowl.
- Put the meat into the bowl and knead in the apple mixture until well mixed.
- Place the Bran Flakes in a clean plastic bag and holding it shut use a rolling pin to crush the flakes into small pieces and then place them on a clean surface.
- Taking a small fistful of the sausage and apple meat roll it in the crushed flakes and place it on a baking tray. Repeat this process until all the sausage meat is used up. (There may be an excess of flakes depending on how thickly you roll the cakes.)
- Place the cakes in the oven and cook for 25-30 minutes until they are cooked on the inside. Cut one in half to test for cooking time- it shouldn’t be raw (red). When cooked serve immediately, or if preferred allow to cool and eat them cold.
Great for packed lunch boxes too.
